コレクション: 干し柿　Dried persimmons

江戸時代から生きる樹齢200~300年の古木から、ひとつひとつ手摘みで収穫した柿を干し柿にしました。

無農薬で育てられた柿を、手作業で皮をむき、空気の澄んだ南島原の自然の風の中で、表面が真っ白になるまでゆっくりと干し上げます。

Persimmons are hand-picked and dried from 200-300 year old trees that have been around since the Edo period (1603-1868).
The persimmons are grown without pesticides, peeled by hand, and slowly dried in the natural breezes of Minami-Shimabara, where the air is clean and fresh, until the surface becomes pure white.
