The vinegar is made from fruit from a 200-year-old tree at the foot of Mount Unzen.
This persimmon vinegar is pesticide-free, fertilizer-free, fire-free, and unfiltered.
It is fermented for six months and aged for more than nine years without the use of water or alcohol.

This is a rare gem of persimmon vinegar that has been further aged and selected as one of 20 pruned products in the treasured foodstuff contest of the trade magazine "Ryouri Tsushinsha" (Cooking News Agency), and was evaluated as "the amber-colored drops that have been aged over and over combine a round aroma and umami taste that transcends the concept of vinegar".
